This recipe is one my 98 year old grandmother showed me when I was staying with her. She is not doing quite as well now, but her mind is still sharp as a tack. I will never forget being in her kitchen that afternoon learning once again from a women who has taught me so much. The poke salad came from my uncle's pasture. As with all greens, they cook down so more is needed than you might think.
1 paper grocery sack full of Poke greens
6to 8 slices of bacon
6 beaten eggs
1/2 onion
curry powder
salt pepper
Clean Poke greens as you would Turnip or Collard greens. Place in large pot of water and cook for 20 minutes. Drain water from greens and add more to fill pot. Cook another 20 minutes. Do this step once more and drain Poke greens
Fry bacon in skillet saving drippings and crumbling bacon. Saute onion in drippings and add Poke greens. Cook for 5 minutes, stirring often. Add pinch of curry powder to eggs and then pour over greens. Stir often until eggs are firm. Remove from heat and serve. Goes well with cornbread.
